Mamoul are cookies consumed as desserts or on the go anytime during the day. They belong to the cookies category of Middle Eastern sweets. Even though they are the most popular among all items of this category, they are not the only type. The category also includes other nuts filled items like Karabij.

Mamoul constitutes an essential element of Middle Eastern dessert tables. No dessert offering without few pieces of it or some other Middle Eastern sweets like assorted Baklava. It is offered as dessert on multiple occasions as well as presented as gifts. It is often offered along with Baklava in beautiful arrangements. Whenever you want offer one of the two types, it is always a good idea to offer the second too. People are used to eat them together since they belong to the same collection of sweets and usually sold in the same stores and retail shops. They are often also produced by the same bakers. Their craftsmanship and ingredients are very similar. Thus, the term "Baklava and Mamoul" is very familiar in the Middle East. When you mention one of the them, the second is assumed implicitly.

It is not totally true that these cookies are seasonal. Like most Arabic sweets, some are consumed more than the others on specific occasions and during certain months of the year. They are however consumed in general all year long as well as anytime during the day. They can be eaten in the morning, at lunch, or in the evening. It is also liked by people of all ages. Kids and adults crave it alike. Everyone needs a sweet treat after all.

The category of Middle Eastern cookies contains more than just one type. The other popular item is Karabij. They are small size cookies filled with pistachios. They are also made from semolina. The big different between and Mamoul however is that Karabij are offered with Natef, which is a white dipping sauce especially prepared for it. Thus, their size and form and made such that it is easy to dip them. They are usually made into bite size pieces. The other but less familiar type is Mamoul-Mad. This is a modified version from the original one where the semolina crust covers the filling only from top and bottom. Thus, the remaining four sides are exposed. These are a little more difficult to prepare and handle, and thus they remained less popular.

Both version are made from the same ingredients and are baked in the same fashion. They however have very different shapes and taste differently as well because they have different filling density. Mamoul is shaped in the form of a dome that encloses its nuts or dates filling. It is thus difficult to differentiate between the different versions when they are mixed together. In order to make it easier to know which piece has what type of filling in it, it has been the tradition to shape them differently depending on the filling in them. Moreover, the pistachios and walnuts filled pieces are usually covered with powdered sugar, helping their differentiation.
