Like all good barbeque meat, good hot wings start when you buy the best meat. The less the chicken has been processed, or filled with additives, the better it will be on barbecue smokers. Fresh, of course, is always better than frozen. Either the whole wings or the smaller wingettes will work just fine. After unwrapping the chicken, rinse it well and pat it dry. Wet pieces of chicken do not brown properly in the BBQ smoker or on the grill.

The first thing to do when you get your new barbecue smoker is season it well. This rids the unit of paint residue and seals it against moisture that causes rust. Coat the interior of the smoker with cooking oil. Canola, vegetable and peanut oils work equally well. Fire it up and bring the temperature to about 300 degrees Fahrenheit and keep it there for about an hour. Do not cook food on the smoker during this process. Allow it to cool and your new smoker is ready to use.
