Oxygen is vital to us and our bodies. As we breathe, it helps us produce energy, and as the oxygen is used by our bodies, specific organisms known as free radicals, are made. They work in tandem with body cells creating oxidative stress, that is, cell damage. In this way the cells proteins, genes, and membrane may be affected. Links have been made between oxidative stress and a variety of diseases and even the ageing process itself.

Oxidative stress is a major problem underlying many diseases today. Our bodies combat oxidative stress with anti-oxidant systems coded by our genes and the aided by anti-oxidants from our diet. Kid's meals are typically deficient of anti-oxidant protection and many even contribute to increased oxidative stress. Studies show that 1 in 5 high school aged kids already has damage from oxidative stress in their arteries.

Vitamin C and Vitamin E are both antioxidants that are believed to play certain very important roles in our bodies. Very similar to one another, both vitamins help prevent free radical damage to our brains. It is believed that free radicals can cause damage to cell structures and other genetic material. The damage free radicals often produce is called oxidative stress, and oxidative stress in turn leads to Alzheimer's disease and other forms of dementia.

This article explains why we need a wide range of different antioxidants to contain free radical damage and oxidative stress and that the best sources for these important compounds are spices.

Antioxidants are a class of nutrients that protect the body from damage caused by different factors, most importantly oxidative damage caused by substances called free radicals. Free radicals are known as "reactive oxygen species", or ROS.
